Abstract:
Variation within individual apples of ‘Jonagold’ in firmness, soluble solids (sugar) content and starch conversion was strongly related to aspect. The south face of apples, relative to the north and east faces, had high firmness, low starch conversion and high soluble solids content. The Streif Index (a commonly-used composite measure of apple maturity) cancelled out the majority of the variation in the individual traits.
